Caramelized Onions and Butter Beans

Ingredients:

  • 2 Cans Butter Beans rinsed and drained
  • 1 Bunch of Kale or Spinach finely chopped
  • 1-30 Cloves Minced Garlic
  • 4 Yellow Onions Thinly Sliced
  • 2 Cups Veg Broth
  • Cashew Cream (see notes)
  • 2 Cups Sliced Mushrooms
  • Fresh Herb (s) of your choice

(marjoram, rosemary, parsley, ect) Chopped Finely - reserve a little for garnish

  • Dash of Onion Powder
  • Dash of Garlic Powder
  • Optional Salt, Pepper, Red Pepper Flakes

Directions:

  • Begin by caramelizing the onions low and slow. While that is going prep the rest of the ingredients.
  • Add minced garlic, mushrooms and greens. Let them reduce down.
  • Add the veg broth and butter beans and allow to simmer down a bit.
  • Add some cashew cream to taste and season with the spices to taste.

When serving, top with a little drizzle of cashew cream, red pepper flakes, and fresh herbs.

Can be served with bread, over a grain, or potatoes (mashed, baked or steamed)

Notes:

• Look up my cashew cream recipe for instructions on how to make it!

• Cashew cream can be left out for overt fat free


• You can replace the cashew cream with a few tbs of mashed potatoes for an over fat free but still creamy texture.
