Oh My Stars!

Nourishing Veggie and Stalline Pasta Soup

Ingredients:

  • 16 Cups of Veg Broth
  • 1 Box Stelline Pasta (i like jovial gluten free rice pasta)
  • 2-3 Cups of Carrots- peeled and large chopped (or baby carrots)
  • 2-3 Cups of Celery - large chopped
  • 1/2 Yellow Onion - large chopped
  • 1-30 cloves of garlic (the more the better!)

Optional:

  • A Sprig of Fresh Herb(s)
  • Dash of Onion Powder
  • Dash of Garlic Powder
  • Pinch of Salt
  • Red Pepper Flakes to Serve

Directions:

  • Place all ingredients in a big pot except the pasta and fresh herbs (if using)
  • Stove top to high heat to just bring to a boil then turn to low/medium and place a lid on the pot- checking periodically so it doesn’t overflow. If your stove top runs hot, you may need to have the lid halfway on.
  • Allow the soup to simmer until all of the vegetables are very well done.
  • Once veggies are nice and soft, use a slotted spoon to remove them all and place in a high speed blender. Add a few ladels of broth to help the blender get going. Set this all aside for now.
  • Put your stove back on high and bring the remaining broth to a boil.
  • Add your box of pasta and your sprig of herbs (if using) and cook for 10 minutes or until the pasta is done.
  • Pasta tends to stick in the first few minutes of cooking so be sure to stir often for the first five minutes. Then occasionally as it cooks.
  • While that is cooking, blend up your veggies until they are nice and smooth.
  • Once the pasta is done, remove the herb sprigs (if using) and add your blended vegetables.
  • Top with red pepper flakes or fresh herbs if desired, and enjoy!

Tips

  • Different vegetables can be used, such as butternut squash, leeks, or anything else that you like- but keep in mind the soup is meant to be very smooth and easy to digest, so make sure whatever you pick will blend well.
  • For my MM people, you can use Anthony’s healing broth recipe for this soup.
  • You can skip the pasta for a simple easy to digest nourishing soup.
  • Instead of pasta you could finely cube potatoes and cook in the same way as the pasta directions. The cooking time will be different so make sure to check them often.
  • This recipe is super simple to make, and is great for kids and older adults who are sensitive or sick and need nourishing meals.
