Sour Cabbage Soup

Fat free

This is adapted from a family recipe. Simple and delicious.

Ingredients:

  • 1/2 a large head or a whole small head of green or red cabbage
  • 1 yellow onion chopped
  • 2 cups of carrots chopped
  • 3 cups of diced potatoes
  • 1/4 cup of chickpea miso paste (optional)
  • 16oz of diced tomatoes fresh or canned
  • 8 cups of water or broth - or more to cover all vegetables
  • 2 cups of pre cooked lentils (optional)
  • 2 bay leaves
  • 1 tsp caraway powder
  • 1 tsp black pepper
  • 1 tsp coriander
  • 2-4 tbs of fresh lemon juice
  • Salt to taste (optional)
  • Pinch of red pepper flakes (optional)


Directions:

Add all ingredients to a large pot except the lemon juice and pre cooked lentils. Bring to a boil then simmer for about and hour or until the veggies and potatoes are tender.


**Alternatively this can be made in an instant pot or pressure cooker. Add everything except the pre cooled lentils and lemon juice, and set on manual for 6 minutes. Let it sit another 10 minutes before you release the steam.

Add in the pre cooked lentils if you are using, and the lemon juice. Serve!
